1.1 ORIGIN
The winery Viña Ijalba was founded in 1975 by Dionisio
Ruiz Ijalba, with the plantation of the first vineyard of the firm in the municipal
area of Villamediana de Iregua Mr Dionisio, a well-known industrialist in La
Rioja, has as his main business the extraction and marketing of gravel and chipboards.
As a consequence of the opencast mining that was used in the extraction of that
gravel, he was left with poor soil, with very little ground depth useful for
agriculture, little fertile and with a lot of stones. It was in these useless
farming lands, that Mr Dionisio planted his vineyards.
Analising the quality winegrowing in La Rioja, this has always been located
in the peripheral lands, those in which no other crop could be grown, hillside
lands, with little ground depth and little fertile, where there was a small
production from the stocks but of a great quality.
It’s plain to see that the vineyards from the winery VIÑA IJALBA
are situated on lands totally similar to those of the traditional winegrowing
lands in La Rioja, which, unfortunately, have been abandoned due to economic
and mechanization reasons.
1.2 VINEYARDS
VIÑA IJALBA now has 80 hectares of its own vineyards
available, spread out in various municipal areas around Logroño, San
Vicente de la Sonsierra and Valle del Oja.
All the vineyard, is original in that it is planted on abandoned opencast mines
which have been restored from an environmental point of view, having received
several national and European prizes for the restoration undergone.
As a consequence of the location of the vineyard, our soils are poor, with
little depth and limy, which oblige the vine to reduce its energy and its grape
production, improving in this way its quality.
We have been practising ecological farming in all our own vineyards since
1994 (Community Regulation 2092/91), this implies that we do not use herbicides,
nor chemical fertilizers, nor synthetic phtyosanitary products, only natural
products. Fruit of this work Viña Ijalba obtained the first ecological
viticulture wine in the Autonomous Community of La Rioja.
In reference to the grape varieties we only use the traditional ones from
La Rioja, investigating the development of minority native varieties (Graciano,
Manturana Blanca and Tinta, etc). Fruit of this work Viña Ijalba presented
in 1995 the first Graciano varietal wine in the history of La Rioja.
1.3 WINERY
Built in 1991, with a modernist style, it is provided with the best existing
technology in the market for the making of quality wines.
The production premises has a capacity of 1.250.000 litres, it is provided
with stainless steel tanks and wooden vats made of French oak, pneumatic press,
control equipment for the cold fermentation temperature, carbonic maceration,
etc.
Viña Ijalba is the first winery in La Rioja which has been certified
with the ISO-14.001 regulations (Environmental Certificate), performing all
the winery processes in a natural way, being strictly environmental, without
chemical additives, recycling waste and treating our sewage waters.
The innovative system of treating sewage water through a green filter has
been included in a European environmental protection project LIFE due to its
originality.
Since 1999 we carry out our grape picking in 20 kg boxes which allow us to
make a manual selection of all the grapes from our vineyards, bunch per bunch
using exclusively healthy and totally mature grapes for our wines.
We have also made a strong effort in recuperating the elaboration of a whole
grape for our “Solferino” wine, as we have also done with the treading
of these grapes.
For the maturing of our wines we have an underground conditioned barrel room
in which 3.000 barrels made with the best French and American oak are settled.

At Ijalba our main aim is to offer quality products, for this reason we have
chosen an original and modernist presentation.
- Bottle: we use a special design, made with anti-UV glass that protects the
wine from light, air and changes in temperature.
- Cork: We use only natural cork, longer and wider than the usual ones.
- Capsule: Made of ecological tin.
- Boxes: With a special design, with different capacities to fit 1, 3, 6 and
12 bottles.
2.2 WINES
T he wines of VIÑA IJALBA, are the result of the conjunction between
a traditional and an ecological vineyard, a modern winery, operative and technologically
advanced and an original presentation with a special bottle that guarantees
a better conservation of the wine. Definitely a great wine, healthy and without
pesticide waste.
IJALBA reserva
- Type of wine: Aged red wine
- Year: Fourth year wine
- Alcohol content: 12,5 % Vol.
- Grape variety: Tempranillo 80 %, Graciano 20 %
- Origin: We have used grapes from our own 80 ha. vineyard, and also from
other selected growers with very old vineyards which have had a low production
from Rioja Alta and Rioja Alavesa.With these growing peculiarities and the
low production per hectare we obtain healthy grapes and of small size which
allow a great chemical compound concentration.
We carry out the grape picking in 20 kg boxes, it being selected on a selection
belt bunch by bunch, throwing out those damaged or unsuitable.
- Elaboration method: We have used the fermentation system with ungrazed,
pressed grapes. The grape, once we have removed the graze and pressed it,
ferments in stainless steel containers with controlled temperature.
- Aging: The wine is introduced in oak barrels with a capacity of 225 L during
its first winter, where it stays a minimum period of two years. During this
time the wine receives eight decantings. Afterwards the wine is microfiltered
and bottled to proceed to its aging in bottles for a period of time between
one and two years.
Aging in barrels and aging in bottles are both carried out in an underground
barrel room, with no light or noise, with a constant temperture of 14º C and
with relatively high humidity.
- Tasting notes: Ruby red wine with brick red tones, nose spiced with soft
hues, with a velvety sticky taste, and full-bodied.
- Observations: This wine can either be consumed immediately, or be conserved
in good conditions for various years.
Serving temperature: 18º C.
- Presentation: Special bottle Viña Ijalba, 0,75 L. Produced with double
anti-UV glass thickness for a higher protection from light, with a modified
neck to make it more hygienic and more airtight. Natural cork of 49mm in length

IJALBA SELECCION ESPECIAL
This wine is the maximum quality indicator of the wines from Viña Ijalba.
It’s the only wine in the world with elaborated with 50 % Graciano and
50 % Tempranillo.
Type of wine: Aged Red Wine
- Year: Fifth year wine which is only elaborated from the exceptional Rioja
harvest.
- Alcohol content: 13 % Vol.
- Grape variety: Graciano 50 %, Tempranillo 50 %
- Origin: We have used grapes from our own 80 ha. vineyard, from the oldest
and less productive ones.
In the vineyard we have removed bunches by hand in order to reduce the production
per hectare with the aim of obtaining small, healthy grapes which allow a
great chemical compound concentration and aromas.
We carry out the grape picking in 20 kg boxes, it being selected on a selection
belt bunch by bunch, throwing out those damaged or unsuitable.
Elaboration method: We have used the fermentation system with ungrazed, pressed
grapes, which later ferments in 10.000 L French oak vats with controlled temperature.
- Aging: After fermentation the wine is introduced in new French oak casks
where it stays for a minimum period of two years. During this time the wine
receives eight decantings.
Afterwards the wine is filtered and bottled so as to age in the bottle for
a minimum period of three years.
Aging in barrels and aging in bottles are both carried out in an underground
barrel room, with no light or noise, with a constant temperture of 14º C and
with relatively high humidity.
- Tasting notes: Wine with a dark cherry colour, nose spiced with soft coconut
hues, with a velvety, sticky taste and full-bodied.
- Observations: This wine can either be consumed immediately, or be conserved
in good conditions for various years.
- Presentation: Special bottle Viña Ijalba, 0,75 L. Produced with double
anti-UV glass thickness for a higher protection from light, with a modified
neck to make it more hygienic and more airtight. Natural cork of 49mm in length
for better airtightness. Ecological tin capsule to avoid contamination.
All the bottles are commercialized in an individual, personalized case.

MURICE
- Múrice: Means “purple colour”
- Type of wine: Aged Red Wine
- Year: Third year wine, depending on availability.
- Alcohol content: 12,5 % Vol.
- Grape variety: 90 % Tempranillo, 10 % Graciano.
- Origin: We have used grapes from our own 80 ha. vineyard, and also from
other selected growers with very old vineyards which have had a low production
from Rioja Alta and Rioja Alavesa.
- Elaboration method: We have used the fermentation system with ungrazed,
pressed grapes. The grape, once we have removed the graze and pressed it,
ferments in stainless steel containers with controlled temperature.
- Aging: The wine is aged for a minimum period of twelve months, in American
oak casks in our underground cellar, with a constant temperature, relatively
high humidity and total absence of light and noise.
Aging in bottles is carried out in the same conditions as in the casks for
a period of time no less than six months.
- Tasting notes: Deep purple coloured wine, which combines the fruity aroma
of Tempranillo with the bouquet developed in the aging. It is, all in all,
a wine with great extract, in body and colour, but which is at the same time
round, fleshy and full.
- Observations: This wine can either be consumed immediately or it can be
conserved in a bottle in a horizontal position with an atmosphere of adequate
temperature and without light for a few years.

IJALBA “GRACIANO”
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)

- Alcohol content: 13 % Vol.
- Grape variety: Graciano 100 %
FIRST WINE ELABORATED IN EUROPE WITH GRAPES 100% GRACIANO
- Origin: We have exclusively used Graciano grape produced in our own vineyards.
Viña Ijalba has the biggest Graciano exploitation in the world (20
hectares), which is grown in an ecological way, that is, with no herbicides,
nor chemical fertilizers, nor synthetic phytosanitary products.
- All the productive process of the grapes is supervised by the Control Organism
of Ecological Agriculture from the Government of La Rioja, following the European
Regulation EEC 2092/91.
The low production per hectare and its classical natural way of growing, high
plant densities, and on low fertile soils with little depth , allows us to
obtain healthy grapes, without phytosanitary waste and with great extract
and colour.
- Graciano: It’s the authorized variety of red wine which covers the
less vineyard area in Rioja (0,4%). Graciano is characterized by being a very
low productive variety, which gives us red-hot coloured wines, an important
amount of acidity and an abundant peculiar aroma; not in vain, at the turn
of the century this variety was quoted as “giving the grace to Rioja
wines”.
- Elaboration method: We have used the fermentation system with ungrazed,
pressed grapes in stainless steel containers with controlled temperature.
Afterwards the wine is cold stabilized and is made a sterilization filtration.
- Tasting notes: Wine of an intense deep cherry red colour, important acidity,
a very intense and delicate fruity aroma, typical of Graciano, complete, velvety
and full-bodied mouth.
- Observations: This wine can either be consumed immediately, or be conserved
in good conditions for various years improving its conditions.
- Serving temperature: 15º C.

SOLFERINO
- WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)

- Type of wine: Young red wine Carbonic Maceration ( fermentation with the
full grape)
- Year: Wine of the year
- Alcohol content: 12,5 % Vol.
- Grape variety: Tempranillo 100 %.
- Origin: We have exclusively used grapes grown in our own 80 hectare vineyards,
which is ecologically grown, that is, with no herbicides, nor chemical fertilizers,
nor phytosanitary products. All the productive process of the grapes is supervised
by the Control Organism of Ecological Agriculture from the Government of La
Rioja, following the European Regulation EEC 2092/91. The low production per
hectare and its classical natural way of growing, high plant densities, and
on low fertile soils with little depth , allows us to obtain healthy grapes,
without phytosanitary waste and with great extract and colour.
- Elaboaration method: We have recuperated the traditional elaboration method
from the Rioja winegrowers, using the fermentation of a full grape but in
stainless steel containers and with a controlled fermentation temperature.
After finishing the fermentation we carry out a treading method, using exclusively
wine which is known as “heart” and which totally comes from this
treading.
- Tasting notes: Wine of a deep purple colour, with extract, which still
conserves its sparkling character (carbonic) due to its early bottling (first
week in December) and with a distinct aroma of Tempranillo in Carbonic Maceration.
- Observations: It’s preferable that this wine be consumed being young.
- Serving temperature: 14º C

LIVOR
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)
- Livor: Means “cárdeno” (purplish), colour of a young
red wine
- Type of wine: Young red wine
- Year: Wine of the year
- Alcohol content: 12 % Vol.
- Grape variety: 100 % Tempranillo
- Origin: We have exclusively used grapes grown in our own 80 hectare vineyards,
which is ecologically grown, that is, with no herbicides, nor chemical fertilizers,
nor phytosanitary products. All the productive process of the grapes is supervised
by the Control Organism of Ecological Agriculture from the Government of La
Rioja, following the European Regulation EEC 2092/91. The low production per
hectare and its classical natural way of growing, high plant densities, and
on low fertile soils with little depth , allows us to obtain healthy grapes,
and with great extract and colour.
- Elaboration method: We have used the system of the crushed grape with the
stalk removed. The grape, once we have removed the graze and pressed it, ferments
in stainless steel containers with controlled temperature.
Afterwards we proceed to stabilize the grapes through physical means and then
go through a sterilization filtration before being bottled.
- Tasting notes: Wine of an intense purple colour, with a great layer, fruity
Tempranillo aroma, round with a good backbone on the palate principally due
to its great extract and colour.
- Observations: It’s preferible that this wine be consumed whilst being
young.
- Serving temperature: 14º C.
- Presentation: Special bottle Viña Ijalba, 0,75 L. Produced with

modified neck to make it more hygienic and more airtight. Natural cork with

ALOQUE
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)
- Aloque: Means light red colour
- Type of wine: Young rosé
- Year: Wine of the year
- Alcohol content: 11,5 % Vol.

Grape variety: Tempranillo 50 %, Garnancha (Grenache) 50 %
- Origin: We have exclusively used grapes grown in our own 80 hectare vineyards,
which is ecologically grown, that is, with no herbicides, nor chemical fertilizers,
nor phytosanitary products. All the productive process of the grapes is supervised
by the Control Organism of Ecological Agriculture from the Government of La
Rioja, following the European Regulation EEC 2092/91.
We have selected the vineyards situated on the farthest borders of the vineyards,
where with moderate sunshine the Garnacha and Tempranillo develop the best
qualities of a rosé.
All this together with the low production per hectare and its classical natural
way of growing, high plant densities, and on low fertile soils with little
depth.
- Elaboration method: We have used the traditional rosé method of
elaboration in Rioja of “free-run juice from the vats”.
Later fermentation with controlled temperature, not over 18º C with native
yeast and in stainless steel containers.
Lastly, it was stabilized through physical means and it went through a sterilization
filtration before its bottling.
Tasting notes: Raspberry coloured wine, with a coloured layer characteristic
of rosés. Fresh, acid and
aromatic, but with a great extract which makes it genuine and different.
- Observations: It’s preferable that this wine be consumed whilst being
young (no more than one year after its harvest)
- Serving temperature: 10 – 12º C
- Presentation: Special bottle Viña Ijalba, 0,75 L. Produced with

GENOLI
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)
- Genoli: A yellow colour which was used in past days in painting
- Type of wine: Young dry white wine
- Year: Wine of the year
- Alcohol content: 11,5 % Vol
- Grape variety: 100 % Viura (Maccabéo – the rather tart Maccabéo
of Southern France)
- Origin: We have exclusively used grapes grown in our own 80 hectare vineyards,
which is ecologically grown, that is, with no herbicides, nor chemical fertilizers,
nor phytosanitary products. All the productive process of the grapes is supervised
by the Control Organism of Ecological Agriculture from the Government of La
Rioja, following the European Regulation EEC 2092/91.
We have selected the vineyards situated on the farthest borders of the vinegrowing,
where with moderate sunshine the Viura variety develops the best balance of
acidity, degree, extract and aromas.
All this together with a classical natural way of growing, with plant densities
of 3.500 stocks/ha., and on low fertile soils with little depth.
Elaboration method: The must macerates in contact with the solid parts with
the lack of air. Once it has been lightly pressed with a pneumatic press the
leeds are taken out by cold stabilization at 12ºC, with the aim of eliminating
undesirable parts of the fermentation. Afterwards it ferments at a controlled
temperature under 18º C, with native yeast in stainless steel containers.
Lastly it is stabilized through physical means and it goes through a sterilization
filtration before its bottling.
- Tasting notes: Wine of a pale yellow colour, with a typical fruity aroma
of Viura. Fresh and acid on the palate, but at the same time doted with an
important extract which characterizes it.
- Observations: Its preferible that this wine be consumed whilst being young.
- Serving temperature: 10º C

IJALBA BLANCO
ONLY WINE IN THE WORLD ELABORATED WITH “MATURANA BLANCA” VARIETY
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)
- Maturana Blanca is the first written reference of a variety in the history
of Rioja, in the year 1622
- Type of wine: Young dry white wine BARREL FERMENTED

- Alcohol content: 13,5 % Vol.
- Grape variety: 100 % Maturana Blanca
- Origin: We have exclusively used the grapes produced in the only two hectares
of the vineyard that exist of this variety, and which have been developed
from an I+D project of recuperation the minority vine varieties from La Rioja
and which also includes the participation of the University of La Rioja, the
C.R.D.O.Ca Rioja and CIDA from the Rioja Government.
This vineyard is grown in an ecological way, that is, with no herbicides,
nor chemical fertilizers, nor synthetic phytosanitary products.
All the productive process of the grapes is supervised by the Control Organism
of Ecological Agriculture from the Government of La Rioja, following the European
Regulation EEC 2092/91.
- Elaboration method: Once the wine has been lightly pressed with a pneumatic
press the leeds are taken put by cold stailization at 12º C. Afterwards it
is barrel fermented with native yeast in French oak barrels where it stays
in permanent contact on its lees, stirring it daily for about four months.
- Tasting notes: Wine of a light golden colour, very intense tropical fruit
aroma. Refreshing on the palate due to its acidity, doted with great volume
and extract which characterizes it.
- Observations: This wine can be consumed whilst being young, but at the
same time it can remain several years in the bottle.
- Serving temperature: 10º C

DIONISIO RUIZ IJALBA
ONLY WINE IN THE WORLD ELABORATED WITH “MATURANA TINTA” VARIETY
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)
- Maturana Tinta is a minority native variety which has practically disappeared
in Rioja
- Type of wine: Red wine with BARREL MALOLACTIC FERMENTATION
Alcohol content: 13,0 % Vol
- Grape variety: 100 % Maturana Tinta
- Origin: We have exclusively used the grapes produced in the only two hectares
of the vineyard that exist of this variety, and which have been developed
from an I+D project of recuperationg the minority vine varieties from La Rioja
and which also includes the participation of the University of La Rioja, the
C.R.D.O.Ca Rioja and CIDA from the Rioja Government.
This vineyard is grown in an ecological way, that is, with no herbicides,
nor chemical fertilizers, nor synthetic phytosanitary products.
All the productive process of the grapes is supervised by the Control Organism
of Ecological Agriculture from the Government of La Rioja, following the European
Regulation EEC 2092/91.
- Elaboration method: Once it has had the stalk removed and has been lightly
pressed, it ferments with native yeast in French oak vats. After 15 days it
is placed in new French oak Bordeaux barrels to carry out the malolactic fermentation,
where it stays in permanent contact on its lees, it being stirred daily for
about four months, finishing its aging in barrels to make a total of 13 months.
- Tasting notes: Wine of a deep cherry red colour, intense fruit and coconut
aroma. Velvety on the palate, powerful and doted with great volume and extract
which characterizes it.
- Observations: This wine isn’t filtered and can be consumed whilst
being young, but at the same time it can be kept several years in the bottle.
- Serving temperature: 16º C
- Presentation: Special bottle Viña Ijalba, 0,75 L. Produced with
double anti-UV glass thickness for a higher protection from light, with a
modified neck to make it more hygienic and more airtight. Natural cork with

IJALBA CRIANZA
WINE ELABORATED FROM ECOLOGICAL WINEGROWING (CEE 2092/91)
- Type of wine: Young cask red wine
- Year: Third year wine, depending on availability
- Alcohol content: 12,5 % Vol
- Grape variety: 90 % Tempranillo, 10 % Graciano
- Origin: We have exclusively used grapes grown in our own 75 hectare vineyards,
which is ecologically grown, that is, with no herbicides, nor chemical fertilizers,
nor phytosanitary products. All the productive process of the grapes is supervised
by the Control Organism of Ecological Agriculture from the Government of La
Rioja, following the European Regulation EEC 2092/91. The low production per
hectare and its classical natural way of growing, high plant densities, and
on low fertile soils with little depth , allows us to obtain healthy grapes,
and with great extract and colour.
Elaboration method: We have used the fermentation system using ungrazed and
pressed grapes, afterwards it ferments in stainless steel with a controlled
temperature under 30º C.
- Aging: The wine ages for at least twelve months, in American oak barrels
in our underground barrel room, with a constant temperature, relatively high
humidity and with total absence of light and noise.
Aging in bottles is carried out in the same conditions as in barrels for a
period of time not inferior to six months.
- Tasting notes: Wine of a ruby red colour with an intense layer, with dark-toasted
and vanilla aromas. It’s full-bodied on the palate and at the same time
silky leaving a lingering finish.
- Observations: This wine can be consumed immediately, or it can be kept
in the bottle in a horizontal position and in an adequate environment with
absence of light for several years.
- Serving temperature: 18º C
